Mauby Bark is also known as Buckthorn Bark. It is utilized across the Caribbean to create a drink known as Mauby, or Maví.
The bark is featured in our book The Budget Gourmet: Cooking with Cents. The drink made from the bark ranges from bitter to fruity depending on the island or family preparing it. Fizz is added to the drink by using a previous batch or incorporating champagne yeast.
